Spanish Roja garlic is one of the first to be harvested early in the season. It has loose outer skins for easy peeling but, this makes the garlic more exposed to the elements and will only keep for 4 to 5 months. One bulb of garlic will yield 8 or 9 cloves per bulb and 65 to 80 cloves per pound.
