Garlic Scapes are a delicacy and harvested in Mid-June. They are part of the garlic flower. Most people think of garlic scape pesto as the only recipe, but there’re unlimited garlic scape recipes. Listed below are a few recipes that you can try making with scapes. Be creative and adventurous. You do not have to follow the recipe exactly to the letter. Remove ingredients you do not like and add ingredients you love to eat into the recipe.

Scapes will keep in the refrigerator for a couple of weeks or can be frozen.

Raw garlic scapes have a strong garlic taste. As you cook scapes, the flavor dissipates and becomes milder. If you are looking for more garlic flavor, I would add them last in the cooking process.
