This is the fourth hardneck garlic available on the farm this year. The name describes this garlic perfectly. The garlic has a pungent taste when raw, but when roasted, it mellows out to a full sweetness that comes out to meet your taste buds. This garlic will last for up to 6 months or longer. It is of the Porcelain variety, and the bulbs are large. The bulb has 4 to 6 cloves. This garlic is extra hardy in all of its characteristics.

As the Oktoberfest celebration and Fall weather start, this is the garlic you want to have in your gourmet collection. I looked up German garlic recipes and found two delicious dishes.

Knoblauchcremesuppe (Creamy garlic soup). Cream of Garlic Soup (Knoblauchcremesuppe) Recipe by Makkachaka – Cookpad What an amazing potato-based soup. I was concerned with the about of cloves in the recipe, but the results were perfect. The sweet garlic flavor infused into the entire soup and left me craving for more. Perfect for a cold fall or winter day.

Champignons mit Knoblauchsauce. (Mushrooms and garlic sauce) This is a favorite in the German Christmas markets. There are different versions of the sauce with the use of yogurt, heavy cream, sour cream, or a combination of the three. This is a simple cream garlic sauce that was heavenly delightful. I can see this as an appetizer from a food truck or at a music festival. It is light and delicious. This is such an amazing sauce, that I can see it being used as a baked potato topping or instead of the traditional horseradish sauce with your prime rib.
